Strawberry cobbler

Ingredients for fruit filing:

32 ounces of strawberries – hulled and quartered
¼ cup sugar
zest of ½ lemon
juice of whole lemon

Combine all ingredients and macerate for 1 hour.


Ingredients for batter:

10 tablespoons butter – melted
1 cup flour
1 cup sugar
1 tablespoon backing powder
¾ cup milk


Whisk flour, sugar and baking powder until combined.

Add milk – batter should be slightly thick.

Add melted butter to cast iron dish/backing dish.

Pour batter mixture over the butter.

Add fruit mixture on top of batter.

Bake at 400° for approximately 45 minuets or until edges are crispy and brown and center is cooked.

Serve with homemade whip cream or ice cream.
